Modern Star Canyon Margarita
In one of his latest ventures, longtime—and justifiably admired—Dallas chef Stephen Pyles has turned his attention to Modern Texas cuisine, celebrated-yet-Texas dishes considered afresh with contemporary touches or, in some cases, as wholesale reinventions (think very tender buffalo meat as the basis of a chicken-fried steak, served alongside mashed potatoes and pea salad). The décor is Texas writ large, with flair and wit, including an extensive taco and margarita bar that accommodates almost thirty. Here, the tequila cocktails are delivered with added showmanship, as in the Canyon Margarita, in which a Don Julio Silver and prickly pear fruit mixture is frothed into a semi-frozen state by barmen who use liquid nitrogen to work their magic. It's almost as fun to watch and as it is tasty to drink.
