There are lots of trendy espresso coffee shops in the Farrer Park neighborhood, but for coffee Singaporean-style try a kopi from Soon Seng Coffee Stall in Pek Kio Food Center (or any of the other myriad local kopi stalls all over the island). Kopi is a treasured morning ritual in Singapore. The beans are roasted with butter and sugar (making “white coffee”) and the grounds are run through a cloth sock on a metal ring, the filter of choice. A dollop of sweetened condensed milk and a scoop of evaporated milk are added to the coffee along with a dash of hot water. You can also ask for it less sweet, black, iced, etc.—but the original version is worth trying once.
