If you’re at all a follower of Scottsdale’s food scene, the name Nobuo Fukuda probably rings a bell. He’s a James Beard Award-winning chef who ran Sea Saw in Scottsdale before opening his own spot, Nobuo at Teeter House, in downtown Phoenix. Well, Fukuda once worked for Chef Shinji Kurita (owner of ShinBay) and still calls him “Master.” So, yeah, you can probably imagine why this Japanese restaurant is ranked one of Scottsdale’s best. Kurita’s keiji (young salmon) sushi and “dazzling” seafood plate earned him a 5-star review from The Arizona Republic just 6 months after opening ShinBay in 2011. His restaurant seats about 30 but, ever the perfectionist, Kurita often caps it at 14.
