Experimental, unafraid to evolve, and particularly good at evoking nostalgia through his contemporary dishes, Bull’s current restaurants in Austin symbolize the hip vibe of the capital city. Second Bar + Kitchen turns out urbane, artistic food with an underlying theme of “comfort.” It also revels in umami-awakening flavors, such as the burst of runny egg yolk found in the Fried Egg and Avocado sandwich, served on toasted bread, dotted with sweet corn relish, and made pungent with layers of sautéed escarole.
