On this particular day, I was on a mission for one of my favorite Southeast Asian street foods: wonton noodles. I presented Sapp Coffee Shop with the challenge of pleasing a customer coming in expecting something specific. I had a vision for what I wanted put in front of me. I wanted slightly chewy freshly made egg noodles as a base for my dish. For a topping, nothing but thinly sliced sweet roasted pork would do. The wontons? They had to be steamed to order and packed with shrimp. I wanted spicy pepper flakes, peanuts, a perfect balance of sugar and lime, and I wanted Chinese vegetables that still had crunch. I wanted the noodles without broth, but just the right amount of stock at the bottom so that when I mixed everything together the dish was not dry. I’m picky, I know. In Thailand I could get the perfect dish, so this is what I craved... and this is what I got. Sapp is a true strip mall gem.
