Cambodia has a number of NGOs that run "training restaurants," with a goal of teaching at-risk youth skills to get good jobs in the hospitality trade. They're all over the board in terms of quality, & probably integrity. Sandan was the best one we visited. As a long-time restaurant industry executive I was very impressed with the operation. They're teaching these kids to do things right, from food safety to production to front of house. Service is the warmest you'll ever experience. And the food is a fabulous, creative update on traditional Khmer dishes. The dining area is lovely and peaceful.
