Acaraje da Regina
On a trip to Salvador, in the Brazilian state of Bahia, with my Brazilian friends I was introduced to a sandwich-like dish called acaraje. These tasty bites are anchored by black-eyed peas formed into a ball and deep fried and then stuffed with vatapa (shrimp, coconut milk, ground peanuts and palm oil) and topped with a salad called caruru (lettuce, tomatoes, fried shrimps and hot sauce). You'll know you've found them when you spot a tent on the street with a lovely Bahian woman in a cotton dress and headscarf...and usually a long line.
