Salut isn't a buttoned-up French dining experience. Instead it takes a cheekier approach to brasserie classics, as its logo—a beret-wearing frog smoking a cigarette (a Gauloise, no doubt)—implies. The “Américain” refers to the casual spirit of the place because the menu is bistro-French to the core: steak au poivre, cassoulet, croque madame, and more (including the pictured oeufs ragout). The raw bar is oyster-forward but also features a shellfish tower with shrimp, crawfish, lobster, and mussels.
