There’s no better path to understanding the essence of Afro-Panamanian culture than through the food of Río Abajo, an urban settlement founded some eighty years ago by a group of mostly Jamaican and Barbadian immigrants. At sundry restaurants along the so-called vereda afroantillana (i.e., the “Afro-Caribbean Trail”), those looking for enlightenment and satisfaction should order yummy arroz con coco (coconut-steeped rice) along with the codfish-stuffed fritters called torrejitas de bacalao, or traditional saus (pickled pigs’ feet)…all are standout delicacies.
