Fridgeir Ingi Eiriksson is perhaps Iceland’s most famous chef, a native of the country who honed his culinary skills during stints in Luxemburg and France. Guests on the Iceland Hangout will take the short ferry ride from Reykjavik to Videy Island—famous both as the home of Yoko Ono’s “Imagine Peace Tower” as well as the Hotel Holt, where Fridgeir presides over the Gallery Restaurant—for a meal that captures the essence of Iceland, served at a house owned by the hotel (seen here). Fridgeir’s menu for this special dinner combines the best of the produce available during Iceland’s glorious if brief summer and the bounty of the sea. Among the many courses will be his signature dish, a lobster soup made with a white chocolate crème.
