Thanks to its Italian community, Montreal always had a strong base of old school pizzerias; but a new wave of glorious pizzerias has hit the city in the past year, where pizza is not just a family dish but an art in its own right. Nowadays, the only acceptable form of pizza is the Neapolitan, which is served with minimal toppings and a thin crust, and, most importantly, is cooked at frightening temperatures - 900 degrees to be exact.
Perhaps due to its location in upscale Outremont, Pizzera 900 has a smart, design-oriented vibe to it that almost makes it feel like a chic brasserie. Their pizzaiolos are certified by the acclaimed Verace Pizza Napolitana in Italy, and they were quick to transform the standards of fast food (when your pizza is cooked within 90 seconds, it's lightning fast food).
Good to know - Pizzeria 900 has one of the loveliest terraces in town. Oh, and they also have a food truck, so keep your eye open.
