If you happen to be in the area and have a kitchen at your disposal during your stay, then I highly recommend buying some of the 'Pansotti con Salsa di Noce' from the Pastificio Dasso in Rapallo and enjoying it at home. (With a nice bottle of the local white wine Pigato of course) These little 'cloud-like' pasta filled bundles with ricotta and local greens are a true specialty of this region and very good from this little shop. (Cooking time 5/6 minutes or until they come up to float.) You have to also take some of the creamy nut sauce to accompany this dish but be sure to water it down a bit with some cooking water from the pasta. Most of the time, you can see the talented ladies making many of the different fresh pasta. Just peek in the window.
