“I highly recommend the classic Khmer cuisine at the Park Hyatt Siem Reap’s stylish restaurant, The Dining Room. The seafood amok, with curry paste and coconut milk, served over organic brown rice, was the best authentic Khmer dish I ate in Cambodia—or anywhere!”

Dine in elegant Art Deco style

One of Siem Reap's most stunning hotels, the Park Hyatt was remodeled by Asian-based hotel designer extraordinaire, Bill Bensley, who designed its predecessor, the Hotel de la Paix. If you're not staying at the hotel, the main restaurant, the Dining Room, is worth a meal simply to enjoy the elegant space with its Art Deco touches, marble floors, hanging lanterns, and art of the walls. Although the outdoor courtyard with its swinging seats with cushions and short tables is lovely in the dry season. The restaurant is a favorite with older travelers and first-timers to Cambodia who are worried about eating out, as it's a safe choice. However, the food is delicious, especially the traditional Cambodian dishes that are authentic in flavor. My only gripe is that the hotel uses a lot of imported ingredients, such as American chickens, when our local produce is wonderful in Siem Reap. They go some way in making up for it with their Masters of Food and Wine program, a series of themed culinary experiences that showcase Cambodian products, from Kampot pepper to palm sugar. Despite the beautiful space and food, don't be surprised if you find yourself dining alone. Siem Reap just has so many great restaurants. Book a meal during an Apsara show and you won't feel guilty for dining at a hotel.
