Smack in the centre of charming Pai sits the Pai Cookery School. There, the lovely Gaew teaches eager students the basics of Thai cuisine.
Lasting much of the day, the classes are intimate and held in a partially-open kitchen which is ideal––who wants to be stuck inside in sunny Thailand? Various courses are available and vegetarians need not fret.
I opted for the Green course during which I made some of my favourite dishes including chicken in green curry (kaeng kiao wan kai), spicy prawn soup (tom yam kung) and papaya salad (som tam).
Midday, everyone hops over to the market where Gaew explains all the ingredients used in Thai food.
Overall, it's a wonderful way to immerse yourself in local culture and it's great value for money. Plus, you get an apron!
