The first thing you notice, even before Ngam’s inviting interior of exposed bricks and naked bulbs, are the fragrant smells coming from chef Hong Thaimee’s open kitchen—which is also the best place to park yourself for some of Hong’s modern interpretations of classic Thai dishes. Start with the Crispy Chicken “Laab” with Sesame Sticky Rice ($14), then devour a bowl of the Classic Pad Thai ($12) or Papaya Pad Thai ($16). Also worth a taste: the Thai Burger with a side of Chiang-Mai Fries and two dipping sauces ($14) or the steamed or deep-fried Whole Branzino “Pad Cha” (market price), seasoned with sprigs of green peppercorns, chili and Thai basil.
