North Queensland’s first and only distillery produces small-batch liqueurs using local sugar, vanilla, and coffee beans. Ask for the owner and head distiller, Mark, whose concoctions range from sugarcane spirits and a gin made with native Australian botanicals to a marshmallow liqueur called Sexy Cat—travelers can sample these at the cellar door. The adjacent café, fashioned out of remnants from an old bridge, serves wood-fired pizzas, slow-cooked brisket, and more than 50 teas. The surrounding land is home to a banana plantation and a small petting zoo, complete with goats, alpacas, and donkeys, making this distillery friendlier than most to families with children. Just watch out for the rainbow lorikeets that like to drink Mt. Uncle’s cocktails as much as you do.
