Exploring a Champagne Cave
UNESCO just designated several areas of Champagne cellars as World Heritage Sites, including the caves of Champagne Taittinger. If you do the tour, you'll see tunnels dug by monks in the 13th century and even older spaces that were once chalk quarries mined by the Romans. It's fascinating, especially because the Champagne-making process is more complex than making regular wine. And I think bubbly is a lot more fun to drink, too!
