Madrigal Panamá

Andrés Madrigal was already a star chef when he came to Panama City from Madrid. He found a home in a fine old Casco Viejo town house for his sophisticated Panamanian-influenced dishes like his signature ropa vieja canelone (cannelloni stuffed with traditional stewed beef). His tasting menu has proved a popular and critical hit, and the restaurant attracts a mix of Panamanian and international guests.

It is rare indeed in this day and age when there is a restaurant with glowing reviews and no website to peruse! But in the case of Madrigal Panama who needs a website when the chef @andresmadrigalg replies freely on twitter and a reservation is as easy as asking! (well it was in this case, make sure to email!) Hidden in the old city, the classically trained and Michelin starred chef turns out spanish inspired dishes with Panamanian ingredients that are as delicious as they are beautiful. The tasting menu changes daily and every bite is as delicious as the next. We debated for the rest of the trip if the bbq octopus was as good as the sea bass ceviche. (I voted octopus!)
