During the growing season in
Colorado, The Fork uses primarily produce that was grown within a half-mile of where it's served. The owners take pride in sourcing locally, and while that requires going a little farther afield at other times of the year, the taste of their from-scratch cooking is never compromised. Located in a small brick-stone building built in 1881 near the west end of town, The Fork serves brunch on Saturday and Sunday and dinner only the rest of the week. The restaurant was founded by two folks who spent much of their lives in the craft-beer industry, so you can be sure they only serve the best beers—and they’ve managed to pull together a pretty solid margarita as well.
