Marinated eggplant, hummus, hot sauce, tahini, sliced cabbage and umami-rich falafels folded into a pliable, pillowy pita. Preferably eaten standing, in the cobbled street, shamelessly dripping sauce everywhere. A lesser known but deeply soul-satisfying Parisian tradition. Closed Saturdays.
