From its stunning modern architecture to its creative culinary scene, Singapore draws on its past and global trends to come up with its own unique perspective. A new generation of local chefs has been busy redefining the country’s familiar hawker center favorites into what’s now called “Mod-Sin,” or Modern Singapore cuisine. Chef Willin Low of Wild Rocket is famous for his Italian twist on hawker fare, from laksa pesto pasta to Thai red curry duck confit fettuccine. The restaurant Labyrinth combines molecular gastronomy concepts with local favorites to create memorable dishes with bold flavors and combinations the likes of pork belly served on a bed of Japanese miso rice and burnt seaweed or a teh tarik meringue.
