Refreshingly modern neo-bistrots feature classic French recipes with an international twist. There is almost always a young, well-traveled, and accomplished chef behind the stove, asking a reasonable price for his or her carefully prepared delicacies that are served in a resolutely casual environment. They opened their doors expecting to be relaxed, neighborhood hangouts with a regular crowd, but have become so popular that getting reservations now requires infinite patience as tables book months in advance. Last year Le Chateaubriand was voted N°11 on the San Pellegrino World’s 50 Best Restaurants list, as Septime, Yam’Tcha, La Régalade Saint Honoré, and Bones lead the vanguard in the latest evolution in Parisian culinary traditions.
