katsu means "victory," and this sophisticated Japanese restaurant from chef Katsuya Uechi certainly tastes like a win. The space itself, inside SLS Las Vegas, is breathtaking: Uechi partnered with designer Philippe Starck to open a room that is modern yet welcoming, and partially illuminated by light-box photographs. The food isn’t shabby, either, with options ranging from traditional sushi and sashimi to items more commonly served at the local steak house. Must-have starters include crispy rice with spicy tuna as well as yellowtail sashimi with jalapeno. Among the meat selections, the Wagyu rib eye is one of the best meals available to carnivores along on the Strip. The restaurant’s innovative cocktail program is worth exploring.
