One soup master ladles the thick gravy into bowls while keeping a close watch over the noodles cooking to each customer's desired tenderness.
Another guy lines the bowls with so many nori sheets and drops in hearty chashu pork slices. He sets the "small" bowl that you ordered in front of you on the counter and you wonder how anyone could handle a medium or large.
