As the premiere restaurant at the Hyatt Regency Huntington Beach, the Watertable exemplifies the resort’s command of casual elegance. A quiet gathering space – complete with studded leather chairs, flat screen televisions, and a library – leads to the restaurant’s entrance and acts as an ideal space for a cocktail before dinner. Sip on the handcrafted Kentucky Tap Water, made with Evan Williams bonded bourbon and cane syrup, or try the signature H.B. old fashioned mixed with a coconut sugar reduction. Later, step into the dining area, where traditional tables and booths accompany indoor fireside seats and a patio with an ocean view. Opt for an open-air reservation outside, and start with a Hamachi crudo topped with smoked sea salt and slices of watermelon radish. Then, create your own meal with the option of steamed diver scallops with a white wine butter sauce, or a grilled house-butchered filet and a side of bacon jam.
For dessert, decide to have sweets on the shore. As a guest of the Hyatt, a new bonfire service complete with blankets and s’mores turns a cozy evening into a memorable one.
