Liz Lambert has made a name for herself converting quirky motels into cool-kid haunts in Texas and beyond. With Hotel San Cristóbal, she brings her magic to a transcendent Pueblo Mágico in the Baja Peninsula. Now she’s bringing her magic to a transcendent Pueblo Mágico in the Baja Peninsula. Just outside of Todos Santos proper, on the small fishing beach of Punta Lobos, the whitewashed, cubist property houses 32 serenely chic rooms, complete with crisp Sferra linens and serape-inspired duvets, vibrant ceramic-tiled bathrooms, and windows that overlook sunny Pacific waves (keep your eyes peeled for migrating gray and humpback whales).

Resist the urge to confine yourself to your Coco-Mat mattress, however. Adventure awaits in the form of surfing off nearby Playa Cerritos, learning to make pottery in an off-site class, or accompanying chef Edgar Palau on a trip to source fresh fish from local anglers. There’s also a beautiful central pool and lounge, a library, a seaside mirador, and a small retail shop on property. When hunger strikes, head to Benno, where biodynamic meals that fuse Mexican and Mediterranean flavors pair perfectly with small-batch mezcals and sustainably harvested regional wines.

This new Liz Lambert hotel in Todos Santos is thoughtfully designed with many modern touches. There are lots of nooks to hang out in with details like beautiful tile and comfortable cushions and throw pillows. They don’t allow kids to stay under 12 years of age, so it’s not for young families. If you’re looking for a place with a lot of energy (in what is typically a sleepy town), this is it.

Benno Restaurant in the Hotel San Cristobal

Benno is arguably one of the best restaurants in the area. A mix of Mexican and Mediterranean, the menu has a variety of dishes to please anyone. We started with the baked farmers cheese with a tomatillo sauce. It was one of our favorite things. And the braised short-ribs with harissa and horseradish did not disappoint. You can choose to sit inside the beautifully designed restaurant or out on the terrace overlooking the pool and beach.

Southern Baja has a stunning new addition–the San Cristóbal–located an hour north of bustling Los Cabos and 10mins from the little magical town of Todos Santos. The hotel is the first international project by my all-time favorite hotel guys, Bunkhouse. I’ve been to this particular part of Baja too many times to count. I’ve always had a very special connection to the area; it’s rugged landscape with the occasional picture perfect cactus, and more than anything, the immediate freedom I feel from the rest of the world, the minute I land. I was protective of new buildings there, but I knew if anybody would do it with integrity, Bunkhouse would. Just like all other Bunkhouse properties, the Hotel San Crisóbal taps respectfully into the local community. Guests are encouraged to get a sense of place through local-led wellness activities, yoga, hiking, surfing, etc. Visitors can even foster a local Baja rescue dog during their stay; which–ahem–lead to a happily wagging, three-legged addition to our flight back to the States. The hotel is a great size. It only has 32 guest rooms, all designed slightly different. The look is minimalist, beachy, and a bit 70s. The insane tilework throughout the property will make you want to tile (or re-tile) every available surface upon your return home. Visual candy abounds throughout all in-and outdoor spaces; luckily there’s also–in true Bunkhouse fashion–a perfectly curated store on property.
