New Nordic Cuisine with british accent
After nine years leading Copenhagen's restaurant, The Paul (1 Michelin star since 2004), british chef Paul Cunningham left the big city to reinvent himself at Henne, somewhere on Jutland's west coast. At Henne Kirkeby Kro, Cunningham does an author cuisine with nordic, but also british influences, where he combines ingredients and techniques in a sensitiva and creative way. 90% of the vegetables are from the restaurant's garden, and, despite his preferences for local products, he's far from being as strict as his nordic fellows. Crispy chicken skin, pork and lamb meat (preserved in the house), iberico ham or an amazing potato chips with herbs are on the menu in harmony with more sophisticated creations, with exquisite ingredients, such as lobster or local oysters.
