You wouldn’t think reservations would be necessary for dinner in a town with a population of 225, but think again. Chef-owners Jen Castle and Blake Spalding have been open here since 1999 and draw as much as they can from their own six acre farm just south of town. They have received awards not just for the excellent food, but also for the way they source, grow, make, cook and serve that food. With so much to do in south-central Utah, it’s worth basing your itinerary around Boulder, Utah. Just remember, this farm to table fare is in high demand, so definitely call ahead.
