My favorite being The Lavender Lady- which stems from the age old wives tale that a female spirit would visit guests in the lobby bathroom. Whist sitting in the stall the guest would suddenly felt a chill followed by the overwhelming scent of lavender. Served in a champagne flute head mixologist Ryan Jones assures me he personally infused gin with lavender and let it steep for thirty days. Add in lemon and lavender bitters and topped with prosecco to give it a fizzy punch.
