A visit to chef Curtis Duffy’s spot — one of just two Chicago restaurants to hold three Michelin stars — is a journey in and of itself. Two menus are on offer on the nightly — a vegetable-exclusive “Flora” option, and “Fauna,” which highlights meats and fish — each one strongly predicated on the season and availability of ingredients. Though most plates change as frequently as the season dictates, a couple have made recurrent appearances due to high demand: Namely, the Alaskan King Crab, with cucumber juice, trout roe, sudachi puree, and lemon balm, and the A5 Miyazaki Beef, seared and served with peanuts, romaine, and Vietnamese herbs.
