A visit to chef Curtis Duffy’s spot—one of just two Chicago restaurants to hold three Michelin stars—reveals two menus on offer nightly: a vegetable-exclusive “Flora” option, and “Fauna,” which highlights meat and fish, each strongly predicated on the season and availability of ingredients. Though most plates change as frequently as the time of year dictates, a couple have made recurrent appearances due to high demand, like the Alaskan King Crab (with cucumber juice, trout roe, sudachi puree, and lemon balm) and the Miyazaki Beef (seared and served with grains and Vietnamese herbs).
