Out in the west Texas town of El Paso I fell in love with . . . veggie menudo. That’s right: the age-old folkloric cure for a hangover, traditionally loaded with tripe, isn’t just for carnivores anymore. Eloise, wedged into the city’s westside, made a splash when it dared to replace animal parts with mushrooms and other veggies, surrounded by chewy hominy. Today, the menu includes a panoply of vegetarian and vegan dishes, as well as possibilities for meat lovers. Cocktails are served until 2 am; pair them with the delicious "pho-gettaboudit" (pho-style rice noodles with root vegetables aplenty).
