Designated a National Natural Landmark, this beautiful state park near Tallahassee is a great spot for a refreshing dip in the springs during the steamy summer months and a prime place to spot alligators, turtles, cormorants, and all manner of wading birds year-round. The nature trails are at their most appealing during the winter and fall months, when cooler temperatures keep bugs at bay. The park’s historic, 27-room on-site lodge, built in 1937 by the industrialist for whom the park is named, hosts retreats and weddings and can be booked on a nightly basis. And there’s a nice restaurant here, too, open for breakfast, lunch, and dinner and serving up Southern specialties.
