Chef José Carles likes thinking of the dishes he creates as short stories that let him recount Panama’s history to his diners. He does as much at Donde José, his tight, sixteen-seat-only dining room (don’t forget reservations). Local down-home recipes are his inspiration, but he especially likes working with lesser-known Panamanian ingredients. It leads to a creative tasting menu made up of sundry “tales” he shares with those in attendance, like the secret behind making his grandmother’s sancocho chicken soup. “I believe that as a new generation we have a responsibility to do our part when it comes constructing our identity.”
