Dampfwerk DistilleryRalf and Mary Loeffelholz (a former consultant to the food and beverage industry and an executive at Delta Airlines, respectively), along with their children, make brandies and aromatic spirits (plus a gin, Mary’s favorite). Ralf, originally from Bavaria, uses Minnesota fruit and a German copper still to make apple brandies. He’s also making a number of botanical liqueurs using recipes from 200-year-old German vintage books. One, called the Helgolander, is a concoction from a tiny island in the North Sea. It’s distilled from several ingredients including cinnamon, cloves, ginger, and citrus—a mix that, according to Ralf, tastes like “a Christmas cookie, but bitter.” —By Megan Krigbaum
