Credo's chefs work closely with two farms in Norway's agricultural heartland to source fine seasonal ingredients for their "new Nordic" concept. Their menu isn't for everyone—Credo serves up to 18 small courses engineered to tickle the taste buds rather than fill one heaping plate. Although experimental (fermentation is a popular twist), dishes don’t veer too far from the acquired tastes of traditional Scandinavian fare. A multicourse evening experience may be on the expensive side, but it’s worth every krone for one of the best examples of new Nordic cuisine anywhere in Norway.
