The chefs at Credo work closely with two farms in the region’s agricultural heartland to source fine seasonal ingredients for their new Nordic concept. It’s not for everyone-Credo serves up anything from 18 small courses to tickle the taste buds rather than shooting for one filling plate. Although experimental (fermentation is a popular twist), dishes don’t delve too far into the acquired tastes of some traditional Scandinavian fare. A multi-course evening experience ranges from 750-950kr. It may be on the expensive side, but it’s worth every krone for one of the best examples of new Nordic cuisine anywhere in Norway. Book in advance to secure one of the ten tables.
