Yakima’s food renaissance got a major boost with the addition of Cowiche Canyon Kitchen in late 2014. Taking its place on an ever-evolving downtown revitalization, the upscale restaurant and bar sets a new standard for dining in the valley. Owner Graham Snyder has deep roots in the food history of the area and uses that pedigree to connect patrons to an eclectic American menu that embraces the valley’s traditions. Billed as a “polished American tavern,” Cowiche shines in every department. From the fruit warehouse stylings on the exterior design, to the wide-open spaces of the interior and work areas, the kitchen and bar pull you in and make you part of the experience. Think of it as “distracted dining” in the finest sense of the notion. Your visit starts with the nicely stylized bar menu. Cocktails embrace local influences, like the fresh red pepper ring floating in the Campanula Sour. The wine list reflects the territory just outside. There are plenty of wine offerings beyond the valley, but no need to venture too far. Warm evenings scream for one of the lovely rose´s on the list, but don’t overlook the craft beers - cold and local. Moving onto food, go for the dry rubbed rack of ribs with slaw and a stack of skinny fries. The salmon in season paired with rose´ and a salad plays well across the palate. The in-house bakery not only produces wonderful breads but a great array of delicious desserts. Pace yourself. There is so much to enjoy in the Kitchen.
