I spent several weeks working near Brindisi during the mid 90's. The area has more of the rural laid back feel than northern Italy. The pace is slower. The coast is sunny without crowds. The traffic is almost nonexistent. Yet it is still Italian. The food was excellent with a trend toward seafood. there is also a rustic feel to it. One favorite dish was Spaghetti Carbonara, a mix of spaghetti, bacon, egg, and Parmesan cheese. As everywhere in Italy; history is all around you. Don't miss the Colonne Terminali della Via Appia marking the southern end of the Appian way or the Trulli; a truly unique way to build a house.
