Hit the Beach at Concepcion Bay
You can hop on the Pacific Coast Highway in California and take Route 1 all the way down to the blue waters of Concepcion Bay. Driving along an ocean with such vibrant shades of blue and green is the best way to cruise, with fields of massive cacti on one side and the vibrant water on the other. On my recent Baja experience with Aventuras Mexico Profundo, we stopped off for a swim at one of the many pull offs along the Bay, and then made a stop at Playa Santispac to enjoy homemade tortillas and guacamole with the fresh catch of the day, sizzled up perfectly and served with a heavy squeeze of lime. Grab a margarita if you're not immediately hitting the road -- they are freshly made and massive -- before heading out to the beach and taking in the views of the crystal waters, with the towering cliffs behind you.
