A colorful, cozy and well-respected vegetarian enclave in New Haven, Claire's Corner Copia was founded in 1975 by a cooking couple who recognized the connection between healthy eating and wellness--way before it became mainstream. This eatery's large wall menu lists a lengthy assortment of entrees, soups, side dishes, salads, smoothies and desserts, all made from vegetarian, vegan and/or gluten-free ingredients. And speaking of desserts, these treats are appealing to both eyes and taste buds. The day's options can extend to vegan chocolate cupcakes, a lavender cake, or carrot cake, a mixture of cookies, and the restaurant's signature Lithuanian Coffee Cake. Long waits at this place can occur, but it's worth the patience.
