Chanko-nabe is what sumo wrestlers eat, so it’s high-fat, high-energy—the sport might look like mere fat-slapping to the uninitiated, but these guys are serious athletes. (The great Chiyonofuji did 3,000 push-ups daily to keep his shoulders in shape.) To fuel the exercise and hit the 10,000-calories-per-day goal, chanko-nabe features a dashi soup that's chock-full of fish and vegetables. Really good and not as heavy as you might think, but you will likely leave this Osaka restaurant smelling like fish.
