A Taiwanese Take on a French Staple
While exploring one of Taiwan's many night markets, the francophile in me was delighted when we stumbled upon a small crepe stand among the fruit juices, stinky tofus, and other xiaochi ("small eats") available for carryout. With a bit of pink strawberry flavoring slathered on top before being folded for portability, this crepe was made crispy--way crispier than I've ever encountered in France--lending it its own Taiwanese personality. While France remains without question the place to go for superb crepes, the Taiwanese interpretation is a fun diversion and worth your New Taiwan Dollars!
