Classified as an “American Brasserie,” CBD Provisions is inside downtown Dallas's Joule Hotel and has earned raves for its focus on local and sustainable sourcing. The restaurant’s dedication to those principles is most apparent in Executive Chef Michael Sindoni’s signature Berkshire Pig Head Carnitas. Served with roasted tomatillo salsa, radishes, and warm tortillas, this is a “DIY” kind of dining experience: you create your own tacos from the meat of an actual roasted pig’s head, teeth and all, family-style. Though this is definitely a dish for meat eaters, CBD has plenty of vegetarian options, like fried Brussels sprouts with burnt honey vinaigrette, beet hummus with smoked blue cheese and marinated celery, and buttermilk biscuits with a creamed collard dip.
