Lining the banks of the estuary, many hundreds of traditional fishing huts on stilts called carrelets are an indelible image of the Gironde, and take their name from the square nets that jut over the water. Many are not as simple as they appear, and are given over to the leisurely pursuit of fishing. Yet, the shrimp, herring and eel you enjoy on your Gironde journey may well just have come from one of the carrelets.
