Sinigang: a new type of soupDuring my last trip to the Philippines I was on a quest to try some new food that I never had before. This is how I found Sinigang.
I ordered Salmon Sinigang. The description said it was a salmon head vegetable soup on a tamarind based broth ... did anyone said tamarind based? That called my name, letter by letter!!
When the food came, I was served in a magnificent bowl that almost looked like a buffet fountain. I could not wait to get my mouth to start the sensory journey through the combination of flavors that soup enclosed... and it did not disappoint. You are first welcomed by a tanginess from the tamarind that make your glands salivate immediately, that mixed perfectly with the meat of the salmon and are topped off by the crunchiness of the vegetables in the soup.
Another beauty of this dish is that you can play with how those flavors arrive in your mouth to create your own personal and private party! Next time you are in the Philippines... give it a try!
