Chef Thierry Blouet helms the kitchen at Café des Artistes, where guests enjoy not only Blouet's culinary creations, but also the setting: a century-old home on a hill with views of the Malecon. Pair the three-course French-Mex fusion prix fixe (vegetarian option available, too) with one of the 350 wines from Blouet's cellar or one of the many top-shelf tequilas and mezcals available.
Café des Artistes, which is perhaps Puerto Vallarta's most elegant restaurant, lives up to its name; its dining areas are just short of artistic overload, almost—but not quite—distracting from the creativity of Chef Thierry Blouet. Blouet, who has presided over the kitchen for more than a quarter century, brought foams and freeze-dried garnishes to Puerto Vallarta before such culinary feats were cool. He still manages to surprise and delight diners at this restaurant near the malecón.
