Savoring Chile's "Forgotten" Classic Dishes
Part of the hip boutique hotel, Castillo Rojo, in the heart of Bellavista, the chef has taken the heart of Chilean traditional recipes and refined it with fantastic technique. The setting and decor channel old Chilean elegance but with clean lines and noble materials like marble table tops. The menu is well-made Chilean comfort food, with an elegant touch. Most dishes are served on painted ceramic or porcelain, typical of many homes for special occasions. We love the pure picante (spicy mashed potatoes) with costillar (spare ribs), the chupe de alcachofas (artichoke gratin), and caldillo de congrio. They also serve one of the most old school desserts in Chile: dulce patria, a sort of sweet locally made pudding.
