Though born in Detroit, Ross Burtwell understands Texas: the chef and owner of Cabernet Grill, located in the quaint Hill Country town of Fredericksburg. Learning to cook in Dallas, this award-winning chef moved from the city to the country and opened Cabernet Grill as a homage to the bucolic. Enamored with Texas wines, Burtwell complements his Texas-accented cuisine with one of the state’s largest collections of local labels—most made in vineyards just minutes from his restaurant. Buffalo enchiladas, jalapeno-stuffed Bandera quail, venison, and sesame-seared red snapper, caught a few hours away in the Gulf of Mexico, will please gourmands hankering for Texas terroir.
