Green Chiles and Tofu
Of course there are many amazing restaurants in the great American Southwest, and thanks to lots of beans and cheese there are a good number of vegetarian options. My favorite thing I ate in the area was the green chile stew with tofu from Bumble Bee's. The tofu was super soft on the inside, slightly crispy on the outside, and possibly the best I've ever had. The stew itself was full of green chiles, perfectly balanced with lots of cheese and sour cream.
