Set inside the stylish Fairmont Pacific Rim, this restaurant celebrates the abundant sea, soil, and culinary imagination of the Pacific Northwest. Over 50 plant species enliven its garden, a glass-walled space, while a bar, champagne room, and cocktail lab hold sway inside. Connoisseurs can't get enough of innovations like the Deep Cove (Island Spirits gin and sea buckthorn) or Candy Cap Magic (mushroom rye, vermouth, and spiced maple, served atop a bed of moss in a terrarium fogged with dry ice—just one of the spectacular custom goblets here). Move onto a mouthwatering meal that could include pan-seared scallops with green apple, or roasted Wagyu on a bed of celeriac and nettles. Even the snacks have style, from home-marinated olives to spicy Merguez lamb sausage with pickled cauliflower!
